Instant Pot Bean soup

This Instant Pot Bean Soup recipe is hearty, nutritious and super easy to make. Ready in under an hour, this is a soup you'll make on repeat. It's also vegan, gluten free and dairy free.

INGREDIENTS

Onion  Carrots  Celery  Garlic   Canned Diced Tomatoes Canned Cannellini Beans Vegetable Broth Bay Leaves sprigs Rosemary Baby Spinach

Sauté the veggies and add the tomatoes.

Add the beans, aromatics and stock

Cook on manual high pressure and then release naturally.

Stir through the spinach and serve with Parmesan if desired
