These one bowl no chill Sprinkle Sugar Cookies are the easiest you'll ever make! Buttery, sweet, delicious and just 5 ingredients, you can have these in the oven in minutes.
Preheat the oven to 325F and line 2 large baking sheets with parchment paper.
Mix the unsalted butter and sugar in a large mixing bowl until combined, scraping down the sides if necessary.This is easiest using a stand mixer or an electric hand whisk but you can also mix it by hand.
Add the all purpose flour and vanilla extract and mix until mostly incorporated.
Add the rainbow sprinkles and mix again.
Use your hands if necessary to make sure it combines into a dough - but be careful to not over mix or over handle as this makes the dough sticky.
Roll the dough into 1½ inch balls and place onto baking sheet, leaving a 2 inch space between cookies. You should have roughly 16 balls.
Using the palm of your hand, gently flatten the balls into a cookie shape around ¼ inch thick.
Shake on some more sprinkles and gently pat them down so they stick to the dough.
Bake for 20 minutes or until just starting to turn golden around the edges.
Remove from oven and let the cookies cool on the baking sheet for at least 15 minutes. They will harden up as they sit.
