Easy Blueberry Compote Recipe (Using Fresh or Frozen Berries)
This easy blueberry compote is a vibrant, naturally sweet fruit sauce which comes together in 15 minutes. Its so useful to have on hand whether you're swirling it into Greek yogurt for a quick weekday breakfast or pouring it over a stack of weekend pancakes. Best of all, it works perfectly with both fresh summer blueberries and convenient frozen ones, making it a year-round family favorite.
2cupsBlueberries - fresh or frozen, no need to thaw
1-2tbspHoney - adjust to taste
1tbspLemon Juice - freshly sqeezed
Optional Flavourings
Sea Salt - to taste
Vanilla Extract - to taste
Instructions
Add the blueberries, honey, and fresly squeezed lemon juice to a small, heavy-bottomed saucepan.
Stir gently to coat the berries.
Place the pan on a medium heat. Once the liquid begins to bubble, reduce the heat to medium-low.
Simmer uncovered for 10 to 12 minutes, stirring occasionally, until the berries burst.
Remove from heat (the mixture will look runny-this is normal).
Stir in sea salt flakes or vanilla extract if using. Be extremely careful tasting the additions as the compote will be extremely hot.
Let sit in the pan for at least 15 minutes. The natural pectin will thicken the compote as it cools into a glossy syrup.
The compote is then ready to use.
Notes
Storage: Keep in a sealed glass jar in the fridge for up to 10 days, or freeze for up to 3 months.Please note that is is not reccomended to serve honey to children under 12 months. Omit the honey if serving to infants.
