Love blue cheese? Then you are going to adore this Easy Broccoli & Stilton Cheese Soup which can be made in just 40 minutes using only 6 ingredients. A delicious and easy lunch or light dinner option any day of the week.
1cupStilton Cheese - crumbled (or another blue cheese of your choice)
Sea Salt and Black Pepper - to taste

Stilton Cheese - crumbled
Chives - finely cut
Chopped Parsley
Instructions
Melt the butter over medium-low heat in a Dutch oven or large saucepan.
Add the chopped onions, season with salt and pepper and sauté until softened, about 8 minutes.
Add the minced garlic and cook, stirring, for another minute.
Add the diced potato, broccoli florets and broth to the pot.
Bring the mixture to a boil, then reduce the heat to simmer.
Cook until the potatoes and broccoli are tender, about 15-20 minutes.
Taste and season the soup again with salt and pepper if needed.
If you have one, use an immersion blender (stick blender) to blend the soup in the pot until smooth. Alternatively use a jug blender then transfer it back to the pot.
Stir in the crumbled Stilton cheese until it melts into the soup. The residual heat from the soup should be enough, but you can keep the heat on low if needed.
Taste and adjust the seasoning again, adding more salt and pepper if necessary.
Serve with fresh chopped chives or parsley if you like, plus the remaining stilton crumbles.
