Marry me chicken pasta is the viral crowd pleasing recipe everyone loves! Juicy chicken pieces are cooked with creamy sauce flavored with sun-dried tomatoes, fresh basil and Parmesan Cheese. Ready in under 20 minutes, it's equally good for date night or family dinner.
10ozPasta - farfalle or other shape of your choice
2tbspButter
1½lbsChicken Breasts - boneless and skinless, cut into bite sized pieces
1tbspFlour
2clovesGarlic - minced
1tbspTomato Paste
⅓cupWhite Wine - or chicken broth
1cupHeavy Cream (Double Cream)
⅓cupSundried Tomatoes - sliced
¼tspRed Pepper Flakes
½cupGrated Parmesan - plus more for serving
SmallhandfulFresh Basil Leaves - chopped
Sea Salt and Black Pepper - to taste
Instructions
Cook the pasta in a pot of salted water until cooked al dente per the packet instructions. Drain and set aside but make sure to reserve one cup of the pasta water for later.
While the pasta is cooking, add the butter to a skillet over a medium heat.
Add the chicken and stir regularly until golden brown and cooked through - around 6 minutes.
Remove the chicken from the pan and set aside on a plate. Sprinkle the flour over the top of the chicken and allow it to sit.
Make the sauce in the same pan. Add the minced garlic and cook for 30 seconds.
Add the tomato paste and wine. Stir and let it bubble for one minute.
Whisk in the cream then stir in the sun dried tomatoes and red pepper flakes.
Stir in the parmesan.
Add the floured chicken back to the pan and cook for a minute or two until the sauce thickens.
Taste the sauce and season with sea salt and black pepper as needed.
Take the pan off the heat and add the drained pasta to the skillet and toss in the sauce until coated.
If needed add a splash or two of the reserved pasta cooking water to thin the sauce out a bit.
Top with the sliced basil and extra parmesan cheese if desired.
