Sheet Pan Greek Roast Chicken Thighs

Greek Roast Chicken is one of my favorite sheet pan recipes. It's such a simple dish, with just a handful of ingredients and is less about cooking than assembly! This roast chicken Greek style dish has all the flavors you already love in Greek Salad - what could be better?

Ingredients
 
 

  • 1 lb Baby Potatoes - scrubbed, cut in half
  • 1 Red Onion - sliced into wedges
  • 2 lbs Chicken Thighs - bone-in, skin-on
  • 2 tbsp Olive Oil
  • 1 Lemon - ½ juiced, ½ sliced
  • 5 sprigs Thyme
  • 1 Red Bell Pepper - sliced
  • 1 Yellow Bell Pepper - sliced
  • 1 cup Cherry Tomatoes
  • ½ cup Feta Cheese - crumbled
  • ½ cup Kalamata Olives
  • Sea Salt and Black Pepper - to taste
  • Fresh Parsley - chopped, optional garnish

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Space out the the chicken thighs on the lined pan with the skin side up.
  • Arrange the potatoes onions and lemon slices on the sheet pan around the chicken.
  • Season everything well with salt and pepper.
  • Drizzle the pan with the olive oil and lemon juice and toss until everything is coated.
  • Add the thyme and roast for around 15 minutes.
  • Move the chicken and veggies around the pan with a spatula and add in the peppers and cherry tomatoes.
  • Roast for a further 15 minutes or until the chicken is cooked through and the vegetables are tender.
  • Once the chicken is fully cooked, remove the sheet pan from the oven.
  • Sprinkle crumbled feta cheese and olives over the chicken and vegetables.
  • Garnish with fresh chopped parsley before serving.
