Sheet Pan Sausage and Vegetables (Easy Weeknight Dinner)
Looking for an easy 30-minute dinner, this sheet pan sausage and vegetable recipe is a weeknight winner. Serve with a simple Greek yogurt and lemon dressing to add a creamy freshness to the dish.
Heat the oven to 425°F / 210°C and line a sheet pan with parchment paper for easier clean up
Add the whole baby potatoes to the pan along with the red onion wedges. Drizzle generously with olive oil, season with salt and pepper and toss well.
Nestle in the sausages, making sure you give everything space to roast.
Roast for 10 minutes to give these ingredients a head start.
Next remove the pan from the oven and add the broccolini stems around the other veggies. Toss everything together in the sausage juices and return to the oven.
Roast until until the potatoes are tender, the broccoli is crisp at the edges and the sausages are cooked through and golden - around 15-20 minutes, You can turn the sausages once more during this time.
Meanwhile make the dressing by mixing the thick Greek yoghurt with the lemon zest, a squeeze of lemon juice, sea salt and a drizzle of olive oil. Taste and adjust so it’s bright and creamy.
Once the sauasges etc have finished roasting, finish with a squeeze of fresh lemon over everything.
Serve hot with spoonfuls of the lemon yogurt sauce on top or on the side. Scatter with the fresh chopped parsley if using.
