These bacon cheese loaded French fries are everything you want in a comfort food classic. Golden fries, topped with crispy bacon, melted cheese, tangy pickled red onions and jalapenos, with a drizzle of cool, creamy Greek yogurt to tie everything together.
Preheat the oven according to the fries package instructions and line 2 sheet pans with parchment paper.
Quick pickle the red onion by combing the sliced red onion, vinegar, sugar, and a pinch of salt in a small bowl. Allow to sit while you work on the rest of the recipe.
Arrange the frozen fries on one sheet pan in a single layer.
Lay the bacon slices out on the other sheet pan, again in a single layer.
Bake both pans together until the fries are golden and crispy and bacon is fully cooked, about 20–25 minutes. Flip the bacon halfway through for even cooking. Do the same with the fries.
Meanwhile thin the Greek yoghurt with a spoon or two of water to make a drizzling consistency.
Preheat the broiler (grill).
Chop the cooked bacon into bite-sized pieces.
Scatter the bacon and shredded cheese evenly on top of the fries.
Broil for 2 to 3 minutes until the cheese melts and bubbles.
Drizzle the thinned yogurt over the fries and top with quick pickled red onions (without the pickling liquid), sliced jalapeños, and fresh chopped chives. Sprinkle with dried red pepper flakes for a spicy kick.
