    Bacon Cheese Loaded French Fries Ingredients

    Fries - for ease and speed I've used a bag of frozen French fries in this recipe. But you could always make your own fries - or use my easy crispy Potato Wedges recipe.

    Bacon - you can use any variety or cut of bacon in this recipe, however if using a thicker cut it will take longer to cook.

    Cheese - use any variety of shredded cheddar cheese, or use a blend of different shredded cheese.

    Greek Yogurt - I use Greek yogurt loosened with a little water to drizzle over the fries.

    Red Onion - I like to pickle some red onions for scattering over the fries. Red onion has a great mellow flavor, you could also use Quick Pickled Shallots.

    Vinegar - I've used apple cider vinegar in this recipe but you could also use red wine vinegar or white wine vinegar.

    Toppings - You can get as creative as you want with additional toppings. Try some freshly chopped herbs like parsley or chives, some sliced green onions, a pinch of red pepper flakes, or try my Quick Pickled Red Jalapenos, or Pickled Serrano Peppers.

    How to Make Bacon Cheese Fries - Step-By-Step

    Preheat the oven according to the fries package instructions and line 2 sheet pans with parchment paper.

    Quick pickle the red onion by combing the sliced red onion, vinegar, sugar, and a pinch of salt in a small bowl. Allow to sit while you work on the rest of the recipe.

    Arrange the frozen fries on one large baking sheet in a single layer and lay the bacon slices out on the other sheet pan, again in a single layer.

    Bake both pans together until the fries are golden brown and crispy and bacon is fully cooked, about 20–25 minutes. Flip the bacon halfway through for even cooking. Do the same with the fries.

    Meanwhile thin the Greek yoghurt with a spoon or two of water to make a drizzling consistency and preheat the broiler (grill).

    Chop the cooked bacon into bite-sized pieces then scatter the bacon and shredded cheese evenly on top of the fries.

    Broil for 2 to 3 minutes until the cheese melts and bubbles.

    Drizzle the thinned yogurt over the fries and top with quick pickled red onions (without the pickling liquid), sliced jalapeños, and fresh chopped chives. Sprinkle with dried red pepper flakes for a spicy kick.

    Serve immediately.

    The secret to avoiding soggy fries is all about space and heat.     To ensure every bite has flavor, chop your cooked bacon into small bits and scatter them evenly with the cheese.     Variations & Substitutions

    I've used frozen French Fries in this ultimate snack recipe, but you could use any variety or cut of fry, just check package directions and adjust the cooking times for thicker cut fries.

    Swap the Greek yogurt for a a dollop of sour cream, or drizzle over some of my Cottage Cheese Ranch Dressing or Sour Cream & Chive Dip.

    Add some chili heat with a drizzle of your favorite hot sauce, or a sprinkle of red pepper flakes. Or fry your favourite BBQ sauce, perhaps with some caramelized onions.

    Swap bacon for thin slices of chopped up pepperoni, or add some shredded leftover rotisserie chicken.

    Got some leftover ground meat chili (lean ground beef or ground turkey would be ideal), make some loaded chilli cheese fries, along with some guacamole and a fresh tomato salsa.

    Aplate topped with golden French fries, crispy bacon pieces, melted cheese, pickled red onions and jalapenos, with a Greek yogurt drizzle and garnished with chopped chives.

    Tips & Tricks

    Line the baking sheets with baking parchment as this will stop the ingredients sticking to the sheet pan, and also helps with the cleaning up.

    For maximum crunch, bake the fries until they are fully golden before adding the toppings. If you add the cheese too early, the steam from the melting cheese can soften the fries.

    Lay the fries out in a single layer so that they crisp up when cooked.

    Once your bacon is crispy, let it rest on a paper towel-lined plate for a minute before chopping. This removes excess grease.

    I always say, if time allows, grate the cheese from a block. Pre-shredded cheeses are often coated in potato starch to prevent clumping in the bag, which can stop them from melting into that perfectly smooth, gooey consistency.

    Always wait until the very last second to add your "wet" toppings (like the yogurt drizzle or pickled onions). Adding them too early will cause the fries to lose their texture quickly.

    How To Store and Reheat

    If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. Because of the toppings, the fries will naturally lose their crunch the longer they sit, so it is best to reheat them using dry heat rather than the microwave.

    To reheat, preheat your oven or air fryer to 350°F. Spread the loaded fries out on a baking sheet lined with parchment paper. Bake for 5 to 8 minutes, or until the cheese is bubbly again and the fries have warmed through.

    Using an air fryer will give you the crispiest results for leftovers, usually taking just 3 to 4 minutes.

    While this dish is definitely at its absolute best served hot straight from the oven, these methods will help you get that crunch back the next day. You can also add more fresh toppings like the yogurt drizzle or pickled onions after reheating to refresh those bright flavors.
