Fries - for ease and speed I've used a bag of frozen French fries in this recipe. But you could always make your own fries - or use my easy crispy Potato Wedges recipe.
Bacon - you can use any variety or cut of bacon in this recipe, however if using a thicker cut it will take longer to cook.
Cheese - use any variety of shredded cheddar cheese, or use a blend of different shredded cheese.
Greek Yogurt - I use Greek yogurt loosened with a little water to drizzle over the fries.
Red Onion - I like to pickle some red onions for scattering over the fries. Red onion has a great mellow flavor, you could also use Quick Pickled Shallots.
Vinegar - I've used apple cider vinegar in this recipe but you could also use red wine vinegar or white wine vinegar.
Toppings - You can get as creative as you want with additional toppings. Try some freshly chopped herbs like parsley or chives, some sliced green onions, a pinch of red pepper flakes, or try my Quick Pickled Red Jalapenos, or Pickled Serrano Peppers.

How to Make Bacon Cheese Fries - Step-By-Step

Preheat the oven according to the fries package instructions and line 2 sheet pans with parchment paper.
Quick pickle the red onion by combing the sliced red onion, vinegar, sugar, and a pinch of salt in a small bowl. Allow to sit while you work on the rest of the recipe.
Arrange the frozen fries on one large baking sheet in a single layer and lay the bacon slices out on the other sheet pan, again in a single layer.



Bake both pans together until the fries are golden brown and crispy and bacon is fully cooked, about 20–25 minutes. Flip the bacon halfway through for even cooking. Do the same with the fries.


Meanwhile thin the Greek yoghurt with a spoon or two of water to make a drizzling consistency and preheat the broiler (grill).
Chop the cooked bacon into bite-sized pieces then scatter the bacon and shredded cheese evenly on top of the fries.

I've used frozen French Fries in this ultimate snack recipe, but you could use any variety or cut of fry, just check package directions and adjust the cooking times for thicker cut fries.
Swap the Greek yogurt for a a dollop of sour cream, or drizzle over some of my Cottage Cheese Ranch Dressing or Sour Cream & Chive Dip.
Add some chili heat with a drizzle of your favorite hot sauce, or a sprinkle of red pepper flakes. Or fry your favourite BBQ sauce, perhaps with some caramelized onions.
