Greek Roast Chicken is one of my favorite sheet pan recipes. It's such a simple dish, with just a handful of ingredients and is less about cooking than assembly! This roast chicken Greek style dish has all the flavors you already love in Greek Salad - what could be better?

For this Greek sheet pan chicken recipe, lemon and olive oil create a simple Greek chicken marinade which is used to coat the chicken thighs and veggies before roasting. This dish is equally great for eating family style or for a dinner party. Greek style roast chicken is easily adapted to suit different tastes...and if the kids don't like olives, leave them out.

Chicken - for the best flavor I've used bone-in, skin-on chicken thighs. But this recipe would work equally well with boneless, skinless chicken thighs, chicken drumsticks, chicken legs, or chicken breast. Just ensure you adjust the cook times accordingly. You could also adapt it to use a whole bird.
Potatoes - I've opted for baby potatoes and cut them in half which reduces cooking time. If using larger potatoes just cut them into smaller chunks.
Vegetables - you can use any variety of veggie in this easy sheet pan dinner. I've opted for red onion, red and yellow bell peppers and sweet cherry tomatoes.
Cheese - I like to crumble Greek feta cheese over the dish just before serving. Feta is a lovely soft, salty cheese which works a treat in this dish.
How to Make Greek Roast Chicken - Step-By-Step

The best way to cook the chicken thighs is to space them out on a parchment lined baking sheet with the skin side up then arrange the potatoes onions and lemon slices around the chicken.
Season everything well with salt and pepper and drizzle the pan with the olive oil and fresh lemon juice. Toss well until everything is coated.
Add the thyme sprigs and roast for around 15 minutes.
Move the chicken and veggies around the pan with a spatula and add in the peppers and cherry tomatoes.
Roast for a further 15 minutes or until the chicken is cooked through and the vegetables are tender.
Once the chicken is fully cooked, remove the sheet pan from the oven then sprinkle with crumbled feta cheese and olives.
Garnish with fresh chopped parsley before serving.
Frequently Asked Questions
Can I use chicken breasts or a whole chicken instead of bone-in thighs?
Yes, you can use any joint of chicken in this recipe, or use a whole chicken, you could even spatchcock a whole chicken to cook it quicker.
You will just need to adjust the cooking time depending on the cut of chicken that you use. A whole chicken will take a lot longer to cook than a chicken breast or thigh joint.
Are Kalamata olives the same as black olives?
Kalamata olives are almond shaped and harvested when ripe. They are a rich dark purple color and they have a lovely fruity taste. Whereas black olives are rounder, often harvested green and left to ripen to black through the brining process. Black olives have a milder flavor to kalamata olives.
Variations & Substitutions for Roast Greek Chicken
Use any joint of chicken, all you need to do is adjust the cook times.
If you want to use a rotisserie chicken, just follow the instructions for the rest of the recipe and add shredded chicken at the end.
Swap baby potatoes for sweet potatoes diced into similar sized chunks.
You can use any variety of veggie in the dish, use what you have in your kitchen. Try zucchini, eggplant, mushrooms, green beans or asparagus.
Add some leafy greens like kale or spinach to the sheet pan for the final 5 minutes.
Swap Kalamata olives for green olives or a mix of different colored olives.
Add whichever fresh herbs you enjoy.
Tips & Tricks For Making Sheet Pan Greek Chicken Recipe
- I always line the sheet pan with parchment paper as this stops everything sticking and makes cleaning up a lot easier.
- Take time to properly season the chicken thighs and veggies, it really will make all the difference to the finished dish.
- For a more intense lemon flavor, and if time allows, you can marinate the chicken thighs in lemon juice and olive oil then set aside for a couple of hours or even overnight before adding to the sheet pan with the vegetables.
- To check the chicken is properly cooked through, I recommend using a meat thermometer. It should read 165°F (75°C) when placed in the thickest part of the chicken thigh.
How To Serve Greek Roast Chicken
This sheet pan dinner is an entire meal in one, however, if you want to add some sides I would recommend a simple green salad, or some steamed green beans or broccoli. You could also add focaccia or crusty bread to help mop up all the sheet pan juices.
How To Reheat Greek Roast Chicken
This is a dish best served fresh from the pan when it is at its most vibrant. The tomatoes do not reheat well and you also risk the chicken overcooking. They do make delicious cold leftovers though and taste great in salads and sandwiches the next day.

Sheet Pan Greek Roast Chicken Thighs
Ingredients
- 1 lb Baby Potatoes - scrubbed, cut in half
- 1 Red Onion - sliced into wedges
- 2 lbs Chicken Thighs - bone-in, skin-on
- 2 tbsp Olive Oil
- 1 Lemon - ½ juiced, ½ sliced
- 5 sprigs Thyme
- 1 Red Bell Pepper - sliced
- 1 Yellow Bell Pepper - sliced
- 1 cup Cherry Tomatoes
- ½ cup Feta Cheese - crumbled
- ½ cup Kalamata Olives
- Sea Salt and Black Pepper - to taste
- Fresh Parsley - chopped, optional garnish
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Space out the the chicken thighs on the lined pan with the skin side up.
- Arrange the potatoes onions and lemon slices on the sheet pan around the chicken.
- Season everything well with salt and pepper.
- Drizzle the pan with the olive oil and lemon juice and toss until everything is coated.
