15ozCanned White Beans - cannellini or great northern, drained & rinsed
½cupChicken Broth
Optional toppings:
Sour Cream
Shredded/Grated Cheese
Fresh Cilantro (Coriander) - chopped
Limes - cut into wedges
Jalapeno Peppers - finely sliced
Scallions (Spring Onions) - finely sliced
Instructions
Heat the olive oil in a large pot over a medium heat.
Add the ground pork and season well with salt and pepper. Break the meat up with a spoon and move it around the pan until browned - around 5 to 7 minutes.
Add the diced red onion and sauté a further 5 minutes, stirring occasionally.
Stir in minced garlic and cook for 1 more minute.
Stir in the ground cumin, chili powder and smoked paprika. Cook for 1–2 minutes until fragrant then add the diced tomatoes (with their juice).
Add the chicken broth and the drained white beans and stir well again.
Bring to a gentle boil, then reduce the heat and simmer uncovered for around 15 to 20 minutes until it is slightly thickened.
Ladle into bowls and top with your favorite garnishes.
