How to Make the Best Bowl of Soup
Before we get to the recipes, there are a few simple tricks I use to make sure every soup turns out perfectly cooked and packed with flavor.
- Build flavor slowly. Don't rush the start. Soften the onions until golden and sweat the vegetables properly, as this creates a deep, savory base that water and stock alone can't give you.
- Seasoning is key, not just at the end. The secret to really good soup is to layer up the seasoning. Add a little salt when cooking the base vegetables, and the broth or stock then adds another layer. Finally, taste the soup at the end of cooking, adding a little more salt and some black pepper as needed.
- Build texture into your soup. The best soups have a contrast of textures. Combine chunky vegetables with lentils, beans, grains or pasta, all of which add depth to your soup. You can also blend a portion of your soup, then stir it back in for a creamier texture.

How to Serve These Fall Soup Recipes
Soup features regularly on my weekly meal plan, particularly over the cooler months of the year. It makes the ideal lunch or lighter dinner option. Many of these soups, for example my Beef Stroganoff Soup, are created to be an entire meal in one dish - which means there's no need to think about or serve anything else. However, if you do want to add something to stretch the meal, here are some easy ideas.
- Carbs for soaking up soup. Crusty bread, garlic bread, focaccia or toasted flatbreads are always a great option for mopping up soup. If you want to add a little extra protein, these Chickpea Croutons go brilliantly with all soups, are very easy to prepare and provide texture and crunch.
- Fresh greens and veggies. For a more substantial meal you can add some extra veggie sides, keeping things light with an easy green salad or roasted green veggies. Try my Spinach & Arugula Salad, Easy Kale & Cannellini Bean Salad, Green Beans with Lemon & Almond, or Charred Broccolini with Lemon & Chili.
Expert Tips & Tricks
- Toast spices for extra depth. If adding whole or ground spices to a pot of soup, take time to toast them first for a minute or two. This allows the spices to bloom, improving the flavor of your soup.
- Add fresh herbs at the right time. Fresh herbs make a huge difference to any soup, but timing matters. Woody herbs like thyme, bay or rosemary are best added early so they flavor the broth. Soft herbs like basil, parsley, chives or dill are best added just before serving for a burst of fresh flavor.
- Add acidity to lift flavor. Stirring through a splash of fresh lemon juice, balsamic vinegar or a spoon of natural yogurt at the end of cooking adds a vibrant acidity which balances the soup.
- Use homemade or good-quality stock. The better the stock or broth, the better the soup. Good stock adds real depth of flavor.
- Finish with a flavor booster. A drizzle of olive oil, a swirl of cream or yogurt, a sprinkle of red pepper flakes, grated cheese or fresh herbs can really lift a bowl of soup when added just before serving.
How to Store and Freeze Soup
- Fridge. Allow the soup to cool, then store in an airtight container in the fridge for 3 to 4 days.
- Freezer. Most soups freeze beautifully. Once cooked and fully cooled, transfer the soup to airtight containers and freeze for up to 3 months. When ready to use, defrost in the fridge overnight.
- Soups with dairy. If your soup contains cream, milk or cheese, freeze it before adding the dairy, as these ingredients can split during freezing and thawing. Stir the dairy in after reheating, just before serving.
- Soups with pasta or noodles. For soups like the Spicy Minestrone with Tortellini or Creamy Mushroom Noodle Soup, freeze the soup before adding the pasta, then cook the pasta fresh when you reheat. Otherwise it soaks up the broth and turns mushy.

To make it heartier, add beans, lentils, rice or pasta. They add texture and thicken the soup at the same time.
