    This Easy Quinoa Caprese Salad transforms the classic Italian flavors of fresh tomatoes, mozzarella, and basil into a satisfying, protein-rich dish that's on the dinner table in around 20 minutes. It's naturally gluten free and high in protein too.

    Because quinoa is a complete protein, it transforms this from a light side dish into a nutritionally balanced, lower-carb main course.

    I always rely on high-quality basics in my kitchen. By tossing the salad in a simple, cold-pressed extra virgin olive oil and balsamic dressing, the natural sweetness of the ripe tomatoes and the richness of the mozzarella are allowed to shine.

    I’ve tested this recipe countless times for my own family, and it consistently delivers on both flavor and convenience.

    • Unlike lettuce-based salads that wilt quickly, the quinoa and tomatoes marinate beautifully in the dressing. It’s incredibly easy to pack up and holds its texture in the fridge, making it the perfect choice for work lunches or summer picnics.

    Many people treat quinoa like a grain because the preparation is so similar. However, quinoa is actually a nutrient-dense seed and is naturally gluten free. Because of this, it requires a little specific know-how to get that perfectly fluffy texture.

    How to Avoid Soggy Quinoa

    There is a definite knack to cooking quinoa. To ensure a light, fluffy texture every single time, follow these steps:

    The Secret Steam: Once the water is absorbed, remove the pot from the heat and cover it with a lid for 5 minutes. Just like cooking rice, this final steam traps the remaining moisture, ensures any excess water is absorbed, and guarantees that all-important fluffy texture.

    Measure Accurately: Start with a 1:2 ratio (one part quinoa to two parts water or broth).

    Rinse Thoroughly: Always rinse your quinoa in a fine wire sieve under cold running water until the water runs completely clear.

    The Simmer: Place it in a medium pan with the water. Bring to a boil, then turn the heat down to a simmer. Cook uncovered until the quinoa has absorbed nearly all the water (around 15 minutes, depending on your batch size).

    Rinse then cook the quinoa and allow to cool.

    Make the dressing by whisking all the ingredients together until the dressing has emulsified.

    When ready to serve, arrange the tomatoes and cheese on a large plate or shallow bowl.

    Scatter the cooled quinoa over the tomatoes and cheese. Season well with sea salt and pepper.

    Drizzle generously with the dressing, top with the shredded basil and serve.

    Variations of Fresh Caprese Quinoa Salad:

    You can buy white Quinoa in most stores, but look out for a blend of white, red and black quinoa for added flavor and something different.

    For a different take you could replace the quinoa with brown rice.

    Cherry tomatoes add wonderful sweetness, but you could also use large buffalo tomatoes and cut them up into bite-sized chunks if you prefer.

    Mozzarella is the cheese traditionally used in an Italian caprese salad. Mozzarella pearls would also work here. Or you could substitute with creamy burrata if you prefer.

    You could add more different herbs - dill or mint would both work nicely here.

    Tips For Making the Best Quinoa Tomato & Mozzarella Salad

    • Take time to properly wash the quinoa before you start cooking it as this ensures your quinoa isn't bitter.
    • Never mix hot or warm quinoa directly with fresh mozzarella and basil - the mozzarella can go rubbery and the basil will darken. Let the quinoa cool to room temperature (or chill it) before tossing the salad together.
    • While you want the quinoa to be cool before adding the cheese, a great chef's trick is to toss the quinoa with just a tablespoon of the olive oil and balsamic dressing while it is still slightly warm. Warm quinoa acts like a sponge and will absorb the flavors perfectly.
    • There are only simple ingredients in this dish but for that reason it pays to get the very best quality you can. Source the ripest tomatoes you can find and the salad will taste all the better for it.
    • When finely shredding the basil leaves, use a technique know as chiffonade. Roll the basil leaves together tightly to form a long pencil like shape. Then cut across the leaves into thin shreds.
    • Seasoning is really important in a caprese salad and it really helps to bring the flavors together. Use a good sea salt and season fairly liberally.

    Plating tips for Caprese Salad

    This is the kind of salad which looks best on a nice wide shallow platter or plate, where you can show off those lovely ingredients.

    If you're entertaining, take some time before your guests arrive to find a suitable serving dish.

    Arrange the ingredients so you can see a bit of everything, season as you go and top with the quinoa and dressing. Add the basil last, just before serving, so it doesn't wilt.

    How To Serve

    I like to serve this as a salad main course. The addition of quinoa really makes this a filling, balanced meal.

    If you're serving it as part of a larger meal it is a great addition to a backyard BBQ or picnic and goes well with grilled steak or chicken. You could also serve it with shredded rotisserie chicken for easy added protein.

    It's also great with Baked Sweet Potato Slices, Sweet Potato Fries or Potato Wedges.

    How to Store

    One of the best things about this hearty grain salad is that unlike traditional lettuce-based salads, it won't wilt and turn into a soggy mess overnight. In fact, the flavors often deepen after a few hours in the fridge!

    • To Refrigerate: Store any leftovers in an airtight container in the refrigerator for up to 3 to 5 days.
    • Meal Prep Tip: If you are making this specifically for weekly meal prep, keep the fresh basil separate and stir it in just before eating. This prevents the delicate herb from oxidizing and turning brown in the acidic balsamic dressing.

    Can you freeze Quinoa Caprese Salad?

    No, I do not recommend freezing this salad. While cooked quinoa freezes beautifully on its own, fresh tomatoes will turn into mush when thawed, and fresh mozzarella will lose its creamy texture and become grainy and watery.

    How to Refresh Leftovers

    Because quinoa is incredibly absorbent, it will drink up a lot of the balsamic dressing as it sits in the fridge. If your leftovers look a little dry the next day, don't worry! Simply toss the salad with a quick splash of extra virgin olive oil, a drizzle of balsamic vinegar, and a tiny pinch of sea salt right before serving to bring those vibrant summer flavors back to life.

Red and black quinoa seeds have a slightly thicker outer skin, meaning they hold their shape better, offer a pleasant nuttier crunch, and won't get mushy when tossed with the dressing. White quinoa is softer and fluffier, which still works great if that is what you have on hand!

    Can I make this recipe vegan or dairy-free?

    Absolutely. To make this a vegan quinoa Caprese salad, simply substitute the fresh mozzarella pearls with a high-quality plant-based mozzarella alternative, or use diced ripe avocado. The avocado adds that essential creamy, rich texture that balances the acidity of the tomatoes and balsamic vinegar.

    Is quinoa considered low-carb?

    Quinoa is not strictly "low-carb" or keto-friendly, as it is a complex carbohydrate. However, because it is exceptionally high in protein and fiber, it has a much lower glycemic index than white rice or traditional pasta. This makes it an excellent "lower-carb" alternative to a traditional pasta salad, keeping you full and satisfied without a blood sugar spike.

    Ingredients
     
     

    • 1 cup Quinoa
    • 3 tbsp Balsamic Vinegar
    • ¼ cup Extra Virgin Olive Oil
    • 1½ lbs Cherry Tomatoes - or buffalo tomatoes, ripe, cut into pieces
    • 1 lb Fresh Mozzarella - torn into bitesize pieces
    • ½ cup Fresh Basil
    • Sea Salt and Black Pepper

    Instructions
     

    Cook the Quinoa

    • Rinse the quinoa very well in a fine wire sieve to make sure it does not taste bitter.
    • Put it in a small saucepan and add 2 cups of water.
    • Bring the water to a boil and then turn down to a simmer. Cook, uncovered, for around 15 minutes or until all the water has absorbed (watch it carefully).
    • When all the water has absorbed, remove the pan from the stove and cover it with a lid for 5 minutes, to give the quinoa a final steam.
    • Allow to cool thoroughly.

    Make the Dressing

    • Add the balsamic vinegar, olive oil, sea salt and pepper to a small bowl.
    • Whisk vigorously with a fork until the dressing has emulsified.

    Assemble the Salad

    • Arrange the tomatoes and cheese nicely on a large plate or in a shallow bowl.
    • Cut the basil into a a chiffonade by rolling the leaves up together and then cutting them into thin slices.
    • Scatter the cooled quinoa over the tomatoes and cheese. Season well with sea salt and pepper.
    • Drizzle generously with the dressing.
    • Top with the shredded basil and serve.
