Ready in 30 minutes and perfect for Taco Tuesday or any night you a fast weeknight dinner.

My Big Mac Taco recipe is inspired by the viral smash burger tacos which took off on TikTok. A smash burger is a well-known technique in burger cookery where seasoned beef is pressed thin onto a hot pan or griddle, creating maximum surface contact for deep caramelisation and those signature crispy edges.
In this version, the beef is cooked directly on a flour tortilla so the juices and fat lightly fry into the base, giving you a hybrid of burger and taco with real structural integrity and flavour.
Once cooked, I add melted cheese to help it bind, then top with classic Big Mac-style elements: shredded iceberg lettuce for crunch, finely diced onion for sharpness, and tangy dill pickles to cut through the richness.
No Big Mac would be complete without the sauce so I'm including my easy take on a classic McDonald's burger sauce. Great with tacos, but also delicious drizzled over any burger, sandwich, salad or buddha bowl.

Big Mac Tacos Ingredients

Ground Beef - I've opted for 80/20 mix ground beef as I find the slightly higher fat content adds much more flavor (this means the meat is 80% lean and 20% fat). But you can make these with whichever ground beef you prefer to eat.
Flour Tortillas - I use small tortillas, opting for street taco sizes which are around 6"/15cm in diameter.
American Cheese - I like to use a ready cut slice of American cheese to top the beef, but you can use any variety of cheese slice.
Big Mac Sauce Ingredient - I combine mayonnaise with white vinegar, yellow mustard, tomato ketchup and salt. What makes this a special sauce is adding sweet pickle relish for that sweet/sour twist.

Make the Homemade Big Mac Sauce
Mix together all the sauce ingredients until smooth. Set aside or refrigerate.


Prepare the Smash Tacos
In a medium bowl mix the ground beef with salt and pepper and divide into 8 equal portions. Spread the beef over each individual tortilla, taking the seasoned beef right to the edges. Season again with a little salt.


Heat a large, heavy based skillet over a medium heat and wipe the pan around with a small amount of olive oil on a piece of kitchen paper. Then carefully place the tortilla meat-side down in the skillet.
Sear for 2–3 minutes until golden brown, depending on how done you like your burger then flip the tortilla and place a slice of cheese on top.


Cook for a further 30 seconds until the cheese starts to get melty and the taco is toasty. Repeat with the remaining tortillas.

Serve the Tacos
Pile on lettuce, pickles and onion then top generously with the big mac sauce.
Gently fold the tortillas to make tacos and enjoy.

Do I need to cook the beef before putting it on the tortilla?
No—the beef cooks directly on the tortilla. As long as your pan is hot and the beef is pressed thin (smash burger style), it cooks through quickly and develops a crispy, caramelised edge.
How can I ensure the beef is properly cooked through?
The taco is first cooked beef side down. The easiest way to check the raw meat is cooked through is to gently lift the edge of the tortilla and have a look. If the beef is pink it needs more cooking, if it's completely brown then its ready.
Why are my Big Mac tacos soggy?
This usually happens if:
- The pan isn’t hot enough (no proper sear)
- The beef is too thick (you've used too much)
- Too much sauce or wet toppings are added too early
Tip: let the beef fully crisp before adding lettuce or sauce.
What tortillas work best for smash burger tacos?
Soft flour tortillas (medium size) work best because they:
- Hold up to the beef fat
- Get slightly crisp at the edges
- Don’t crack when folded
Avoid corn tortillas—they tend to break and don’t crisp in the same way.
What burger toppings can I use?
With a few simple ingredients you can elevate your tacos. Think about your favorite burger toppings and burger sauces and go with that. Here are some suggestions:
- cheese slices - American cheese, cheddar cheese, Swiss cheese, mozzarella
- shredded iceberg lettuce
- sliced tomato, dill pickles/gherkins, avocado
- red or white onion - diced, fried or pickled
- chilli - sliced jalapeno or sprinkle of red pepper flakes
- sauces - special sauce, tomato ketchup, mustard, hot sauce, burger relish, sweet relish
What other recipes can I use the special burger sauce with?
This is a special sauce, full of flavor and it would be great topping any beef, lamb, turkey or chicken burger. You could also use it to top regular beef, chicken or fish tacos. It's also great added to your favorite sandwich, drizzled over fries, or a salad or buddha bowl.
Can I make Big Mac tacos ahead of time?
They’re best eaten fresh, but you can prep everything ahead:
- Cook the beef bases
- Make the sauce
- Prep toppings
Then assemble and reheat the beef-tortilla base in a dry pan for 1–2 minutes before serving.
Can I cook these in the air fryer?
Not really recommended. You need direct pan contact for:
- Proper smash browning
- Beef caramelisation
- Tortilla crisping
A skillet or flat pan gives much better results.

Variations & Substitutions
I've used 80/20 ground beef, but you can use a lower fat ground beef if you prefer.
Swap ground beef for other ground meats like ground turkey or lamb.
I've topped the beef with a slice of American cheese but you can swap this for any variety of melted cheese, Swiss cheese and cheddar cheese both melt well.
When making the homemade Big Mac sauce you can swap the sweet pickle relish for finely diced dill pickles and a little of the pickle juice.
Can I make these healthier?
Yes—easy swaps:
- Use lean ground beef or turkey
- Use reduced-fat cheese
- Go lighter on sauce or serve it on the side
- Add extra lettuce and tomato for volume
It's also worth remembering - because tacos are homemade and made from simple, whole ingredients, they’re already a more balanced option than most takeaways—so you’re in control of what goes in, from the beef to the sauce to the fat you cook with.
Tips & Tricks
- Ensure you season the beef properly with salt and black pepper, this will make a big difference to the final taste.
- Take the raw beef mixture right to the edge of the tortilla as it will shrink back a bit from the edges as it cooks.
- The homemade sauce can be made ahead and stored in an airtight container, in the refrigerator, until you are ready to serve.
- Make sure your pan is properly hot before adding the beef-side down tortilla—this is key for getting those crispy, caramelised smash-burger edges.
- Don’t overcrowd the pan; cook one or two at a time so you can press and control them properly.
- Let the beef cook undisturbed for a minute or two before checking—this helps build that signature crust.
- Add cheese while the beef is still hot so it melts properly and helps “glue” the toppings in place.
- Serve immediately after assembling for the best texture—these are at their absolute best fresh from the pan.

How To Serve
I like to serve these tacos immediately straight from the pan while everything is still hot and melty for the true smashburger experience. Top with melted cheese, shredded iceberg lettuce, finely diced onion for crunch, tangy dill pickles, and finish with a generous drizzle of the special burger sauce.

- Remove from the heat and reserve on a plate or tray and repeat with the remaining tortillas. To keep warm either tent with foil or cover and place the burger tortillas. in a warm oven at 200ºF/100ºC
Serve the Tacos
